3 cups grated raw potatoes
3/4 cup hot water
1/2 medium grated onion
1/4 cup melted butter
salt & pepper to taste
3 beaten eggs

Directions:
Directions:
Pour hot water over grated potatoes to keep from darkening.

Add grated onion, butter, salt and pepper to potatoes. Stir in beaten eggs. Bake in greased casserole at 350º for 1 to 1 1/2 hours.
