1 1/2 lbs. beef, cubed
3 T. oil
1 c. mushrooms, sliced
1 small onion, chopped
1 can tomato soup
1/4 c. water (for large crock-pot add 2 cans tomato soup & 1/2 c. water)
1 bay leaf
1/2 tsp. salt
1/4 tsp. pepper
1 tsp. paprika
1/2 c. sour cream

Heat oil in a skillet and brown meat on all sides. Spoon meat into crock-pot and saute mushrooms & onion a few minutes. Remove pan from heat. Add remaining ingredients, except sour cream, to onions and mushrooms and stir. Pour over meat and stir together. Cover and cook on low 7 to 9 hours. At serving time stir a few T. of cooking juices with sour cream, stir into meat mixture. Serve over rice or hot noodles.
