1 pkg lemon jello, 1 can shoe string beets, 1 c chopped celery, 1 small grated onion, 1 1/2 Tbsp mustard seed, 1/3 c sugar, 4 T vinegar, 1/8 tsp salt

Directions:
Directions:
Drain beets, Add water to juice to make 1 c juice. Heat juice to boiling. Add jello, sugar, salt, vinegar, and mustard seed. Chill in refrigerator until thickened enough to add remaing ingredients. Pour into 1 qt mold. Top with a mixture of 1 c sour cream, 2 Tbsp chopped onion, 1/2 tsp sugar, 1/2 tsp horseradish.

Gellatins are not really a favorite of mine but this is delightful. Came from Pauline Neilson and is great served with ham or sausage dishes.
