3 c. water
1 1/2lb. beef shanks
1 med. onion, diced
2 carrots, diced
2 stalks of celery with tops, sliced
1 (14 1/2 oz.) can tomatoes
2 tsp. salt
1- 10 oz. package frozen mixed vegetables
1T. dried basil
1 clove garlic, minced
1-16 oz. can garbanzo beans
1 tsp. oregano
1 zucchini, sliced
1 c. macaroni

1. Place all ingredients in crock-pot except zucchini and macaroni. Stir to mix thoroughly.
2. Cook on low, 10 to 12 hrs.
3. During last hour, remove meat and bones. Cut meat into bite size pieces and return to soup. Add zucchini and macaroni.
4. Turn crock-pot to High and cook 1 hr. Ladle into bowls and sprinkle with parmesan cheese.
