1 1/2 c, self-rising cornmeal
3 eggs
1 small can Mexicorn
1 tsp. salt
2/3 c. cooking oil
1 c. buttermilk
1/4 c. jalapeno peppers, chopped
1 c. sharp cheddar cheese, grated

Directions:
Directions:
Mix all ingredients, except cheese. Pour half of the batter in greased oblong pan. Spread cheese over top. Pour remaining batter on top of cheese and bake at 375º until golden brown, about 40 min.
