5 - boneless chicken breasts
2 beaten eggs
1 cup cracker crumbs
1/4 cup olive oil
3 T butter
1/4 cup flour
1/2 tsp salt
1/8 tsp pepper
2 1/2 cups milk
1/2 cup white wine
1 cup shredded Swiss cheese

Directions:
Directions:
Sprinkle chicken with salt and pepper, dip in egg, and then in
cracker crumbs. Brown chicken in oil for approx. 2 mins. or
until lightly brown. Remove and place chicken on plate with
paper towel.
Take a sauce pan, melt butter, slowly blend in flour,
salt and pepper, and milk. Cook and stir until thick
and bubbly. Remove immediately from heat. Stir in wine.
Take 1/2 chicken and place in casserole dish, pour in enough
sauce to cover chicken. Then put in rest of chicken and pour
in rest of sauce. Cover and bake at 350 degrees for 50
minutes.
Take out and sprinkle with Swiss cheese, leave uncovered
and place back in oven until cheese is melted.
