Ingredients: 1 lb. fresh asparagus spears (about 3 cups), trimmed and cut into 1-inch pieces 1 cup (6 oz.) ham, chopped 1/2 cup red bell pepper, chopped 4 sourdough English muffins, split in half 2 cups (8 oz.) shredded Co-Jack cheese, divided 8 eggs, slightly beaten 2 cups milk 1 tsp. dry mustard 3/4 tsp. salt 1/4 tsp. ground black pepper 1 pkg. (0.9 oz.) Hollandaise sauce mix

Directions:Preheat oven to 375º F. Cook the asparagus, covered, in a small amount of water for a few minutes until crisp-tender; drain. Chop ham and bell pepper. In bottom of a 9"x13" baking dish, place English muffin halves, split side up. Top with 1 cup of cheese, asparagus, ham and bell pepper. In a 2 qt. bowl, whisk eggs, milk, dry mustard, salt and black pepper until well blended. Pour egg mixture over ingredients in 9"x13" pan. Bake 35 minutes. Top with the remaining 1 cup cheese. Bake 5-7 minutes or until cheese is melted. Meanwhile, prepare Hollandaise sauce according to package directions. Cut strata into squares. Serve with sauce.

Notes: This is a great recipe to serve for breakfast or brunch. You can prepare it the evening before, refrigerate and bake the next day. Also, you can substitute any combination of vegetables or breakfast meat for the ham and asparagus.
