1 1/3 cup of flour
1 1/2 tsp baking powder
1/2 tsp of salt
1/2 cup white sugar or Swerve
1/4 cup brown sugar
2 eggs, room temperature
1 tsp vanilla
1/3 cup half and half
1/4 cup of butter, plus 2 tbsp of butter
1/4 cup chopped pecans
1 8 Oz can of pineapples slices in juice, drained, reserve juice

1. Preheat oven to 350 degrees. 2. Cream butter and white sugar. 3. Add eggs and vanilla until combined. 4. Add dry ingredients along with half and half and reserved pineapple juice until completely combined. 5. Melt two tbsp of butter and pour into 9 inch baking pan. 6. Sprinkle brown sugar and pecans evenly over butter. Arrange pineapple slices over pecans, overlapping to fit.
7. Pour batter over pineapple slices. 8. Bake 40 to 45 minutes. 9. Allow to cool for fifteen minutes then invert cake onto serving dish; Serve warm.©
