2 1/4 c flour
1 tbsp pumpkin spice
1 tsp salt
1 tsp baking soda
2 eggs (beaten)
2 c sugar
1/2 c oil
1 c pumpkin
1 c chopped cranberries

Directions:
Directions:
Combine flour, pumpkin pie spice, salt, and baking soda.

In separate bowl combine: eggs, sugar, oil, and pumpkin.

Pour into dry mixture. Stir until moist.

Stir in cranberries.

Bake at 350º for about an hour. I have found that for one loaf it takes about 70 minutes, and for four mini loaves it's about 38 minutes.

NOTE: Doubling the recipe makes three loaves.
