Large flour tortillas
1/2 lb Monterey Jack Cheese, grated
Chopped jalapenos or parsley
Oil

Directions:
Directions:
Heat a griddle or large skillet with a small amount of oil. Lay one flour tortilla on griddle, sprinkle with cheese and chopped peppers and cook until cheese begins to melt. Top with second tortilla and turn entire "pancake" over carefully with a large spatula. Continue to grill until cheese is melted. Turn onto plate and cut into wedges. Serve very hot with cups of picante sauce and sour cream if desired. Other fillings like chili, cooked ground beef, chicken, chopped tomatoes, refried beans and the like over the grated cheese if desired.
