Several lbs of skirt steak (perferably the inside skirt, it's more flavorful)
Burgundy
onion, chopped
bell pepper, chopped
Italian dressing
Red and black pepper
Paprika
Garlic Powder
Salt
Flou Tortillas
Barbeque, pico de gallo or picante sauce

Trim excess fat off meat. Marinate meat in mixture of burgundy, onions, bell peppers and dressing. (In quantities to taste) overnight in refrigerator. Wrap meat in aluminum foil and cook over coals for 1-2 hours. After meat is well-steamed, remove foil, season with red and black pepper, paprika, garlic powder and salt. Grill meat unwrapped for 10-15 minutes over coals and hickory chips (for smoke flavor). Slice meat in thin strips, place some in a flour tortillas, sprinkle on favorite sauce and roll-up.
