10 plum tomatoes, chopped
3 med. green peppers, cut into 1 inch pieces
2 c. (8 oz.) shredded mozzarella cheese
1 pkg. (3 1/2 oz.) sliced pepperoni
1 can ( 2 1/4 oz.) sliced ripe olives, drained
1/4 c. chopped onion
1/3 c. tomato juice
1/4 c. red wine vinegar or cider vinegar
1/4 c. olive or vegetable oil
1 garlic clove, minced
1/2 tsp. dried basil
1/4 tsp. pepper
3/4 c. seasoned salad croutons

In a large bowl, combine the tomatoes, green peppers, cheese, pepperoni, olives and onion. In a small bowl, combine the tomato juice, vinegar, oil, garlic, basil and pepper; mix well. Pour over tomato mixture and toss to caot. Cover and refrigerate for severla hours. Just before serving, sprinkle with croutons.
