3 Lbs. Bottled or Canned Pie Cherries (4 cups)
1/2 Cup of the Cherry Juice
3 Tbsp. Quick-cooking Tapioca
1/4 Tsp. Lemon Juice
1/4 Tsp. Vanilla Extract
3/4 Cup Honey
1 Tbsp. Omnivite Stevia Powder or other sweetner
1 Tbsp. Butter

Directions:
Position oven rack on the lower third of oven. Preheat the oven to 425º. Shake the cherries in the can and then drain into a cup. Pour cherries into a bowl along with the 1/2 cup of cherry juice. Add in the tapioca, lemon juice, vanilla, honey and stevia. Let stand for 15 minutes. then pour into a bottom pie crust and dot with 1 tablespoon of butter, cut into small pieces. Cover top with crust and then seal the edges. Cut steam vents in the top. Bake the pie for 30 minutes. Slip a baking sheet beneath it and reduce oven temperature to 350º. Bake another 25 to 30 minutes until thick juices are bubbling out.
