1/2 lb ground beef
3/4 c chopped onion
3/4 c shredded carrots
3/4 c diced celery
1 tsp dried basil
1 tsp dried parsley flakes
4 Tbsp butter, divided
3 c chicken broth
4 c diced potatoes
1/2 c flour
8 oz. processed American Cheese, cubed (2 cups)
1 1/2 c milk
salt and pepper to taste
1/2 c sour cream

Directions:
Directions:
Brown and drain beef, set aside
Saute onion, carrots, celery, basil and parsley in 1 Tbsp butter until veggies are tender. Add broth, potatoes, and beef. Bring to boil. Reduce heat, cover and simmer until potatoes are tender. In small skillet melt remaining butter. Add flour, cook and stir for 3-5 min until bubbly. Add to soup, bring to boil. Cook and stir 2 min. Reduce heat to low, add cheese, milk, salt and pepper. Stir until cheese melts. Blend in sour cream.
