1/2 c butter
4 Tbsp. flour
1 Tbsp salt
3/4 tsp black pepper
1 quart hal and half, divided use
13 oz chopped green chilis
Shredded Cheddar cheese, to garnish
Croutons, to garnish

Directions:
Directions:
Melt butter in large pan over medium to lo heat. Stir in flour, mix, then add salt and pepper. Pour in 3 c of half and half stirring while continuing to heat. Blend chiles and remaining 1 c half and half in blender. When base sauce is thickened, add chili mixture. Do not boil. Just heat well. Serve in bowls and garnish with cheese and croutons.
