3 c. potatoes, cubed
1/2 c. celery, chopped
1/2 c. carrots, sliced
1/4 c. onion, chopped
1 tsp. parsley flakes
1/2 tsp. salt
1 1/2 c. water
1 chicken bouillon cube
2 tsp. flour
1 1/2 c. milk
1/2 lb. Velvetta cheese, cubed

Boil the vegetables in the water for 15-20 minutes, or until tender. Combine the flour with some of the milk and blend until smooth. Add the rest of the milk and pour into the hot vegetable mixture stirring constantly. Add the cheese and heat until melted.
