2 15 1/2 oz. cans (3 cups) chickpeas, drained
3 tbsp. tahini paste (sesame seed paste)
3 tbsp. fresh lemon juice
3 tbsp. extra-virgin olive oil
1/4 cup water
1 medium garlic clove, crushed
1/2 tsp. ground coriander
1/4 tsp. ground cumin
3/4 tsp. salt
pepper, to taste

Place all ingredients in a food processor and puree until smooth. Serve at room temperature along with pita chips and/or fresh cut vegetables.
