1 pint vanilla ice cream
2 cups self rising flour
fruit topping
Cool Whip

Combine softened ice cream with flour; beat until smooth.

Spoon into a well greased muffin pan, about 3/4 full. Bake at 425º for 20 to 25 minutes.

Split muffins, top with thawed strawberries or your favorite fruit topping and whipped topping.

Bake as you eat dinner! They will be ready for dessert. Add a Tbsp. of sugar to batter for a sweeter shortcake.
