2-1/2 lbs. yellow squash (sliced)
1 med. onion (chopped) or 1 tsp. onion powder
1 large carrot (grated)
1/2 cup water
salt
1 8oz. ctn. sour cream
1-1/4 cup stuffing mix or bread crumbs
1 cup cheddar cheese
1 stick butter
1 can cream of chicken soup

Directions:
Directions:
Put squash, onion, carrot, salt and water in pot and cook until tender. Drain well, then add butter, soup and sour cream while still hot and mix well. Stir in stuffing mix and cheese. Save 1/4 cup of stuffing. Bake at 350º for 30 min. in greased casserole with 1/4 cup stuffing sprinkled on top.
