1 pkg. frozen chopped okra
1 cup Tony's Creole Instant Roux Mix
12 cups cook water, divided
3 T. butter or margarine
1 small onion, chopped
1 bell pepper, chopped
1/2 tsp. garlic, minced
1 pound pkg. sausage, chopped
3 bay leaves
salt
pepper
Tony's seasoning
parsley
1-1/2 lbs. Shrimp, peeled & deveined

Boil okra until slime begins to disappear - approximately 35-45 minutes. Drain.
Meanwhile, in a large pot over medium heat, whisk Tony's Instant Roux mix with 2 cups cool water. Bring to a boil. After mixture begins to thicken, remove from heat. Continue to stir until well mixed. Melt butter in a skillet over medium high heat. Add onion and bell pepper and cook until soft. Add garlic and cook for 2 minutes. Add remaining 10 cups water, vegetable mixture, okra, sausage and bay leaves to roux. Add salt, pepper, Tony's seasoning and parsley to taste. Bring to a boil, and simmer for at least 1 hour. Add shrimp and cook for 30-45 minutes or until pink. Serve over hot, cooked rice.
