Ingredients: 2 pkg. dry yeast 1/4 cup lukewarm water 1 tsp sugar 3/4 cup sugar 3/4 cup shortening or margarine 2 egg yolks 2 tsp salt 6 - 7 cups all-purpose flour 2 cups milk (preferably canned evaporated milk, plus hot water to equal 2 cups) Fillings and toppings: cook dried prunes, apricots or peaches; sweeten & mashed. Directions:Dissolve yeast in lukewarm water and sprinkle with 1 tsp sugar. In a large bowl, cream 3/4 cup sugar and shortening. Add egg yolks and salt and mix well. Add the dissolved yeast and about 1/2 cup of flour. Mix slowly with mixer; add all the milk and continue adding remaining flour, using mixer or stir and work by hand until dough is glossy. Cover; let rise in a warm place until double in bulk, about 1 hour. After dough is risen, cut off small portions of dough, about the size of an egg. Using a tablespoon, shape into balls. Place about an inch apart on greased pans. Grease tops well using at least part butter to improve flavor. Let rise until light. Make an indention in each kolache for fruit filling. Fill with fruit and bake in 425ºF oven for 12 to 15 minutes. You can butter kolaches after removing from oven.
Cheese Filling: 1/2 lb cottage cheese, 1/2 tsp salt, 1 egg yolk, 1/2 cup sugar, 1 tsp grated lemon rind, 1 TBS lemon juice. Mix all together and fill. |
