Ingredients:
zucchini
butter
curry
black pepper
onion
Parmesan Cheese

Directions:
Directions:
Green zucchini or small yellow squash. Cut in half lenghtwise. Cut flesh surface with slits every 1/2" in both directions (so there is a criss/cross pattern), cut as deep as you comfortably can.
Spread butter on the cuts and bend the boat so that you can force butter into the slits. Sprinkle with curry, black pepper and salt (to taste, I use none). Slice very thin onion pieces and lay on buttered surface to form single layer. Sprinkle with Parmesan cheese.
Roast in broiler until chrispy on top or as long as you like. If the yellow squash is real young you can get by with just the broiler, if an older squash then you might let it cook for 5-7 minutes before you broil the top cheese surface.
You can also grill these and just let them almost burn on the skin side,
