I Love Soup Even if it is Asparagus Recipe

Ingredients: 1 pound of fresh Asparagus, chopped 1 cup of chopped celery 3 cups of chicken broth ½ teaspoon grated lemon peel 2 tbls fresh lemon juice 1/16 teaspoon white pepper ( or whatever) 1/2 cup of whipping cream

Directions: |
Directions:Combine asparagus, celery and chicken broth in large saucepan. Heat to boiling reduce heat and cook for about 10 minutes. If you have already prepared the asparagus left from another meal just cook the celery and broth. Add cooked asparagus at the end of this process. Cool. Pour asparagus mixture into a food processor or blender. Cover and blend until smooth. Pour in lemon, grated lemon peel, whip cream and pepper and blend. Pour in pan and heat till warm do not boil. Serve with fruit salad, veg’t salad and bread or crackers. Yum. |

Notes: I am surprised that my children like this soup. Most of the time I prepare Asparagus for a dinner and DOUBLE the batch so that I might use it for the soup. There are always left overs. Great for a fast meal of Asparagus Soup.
