1 pork loin roast (enough for two servings for your family- we use a Costco size one)
1 pkg taco spice
barbeque sauce

Directions:

Place pork loin roast into Crock pot sprayed with Pam.(you may have to cut in half and stuff it) Cook on low heat overnight. (You can start it early in the a.m. or put it in at about 10:30 before you go to bed)When you wake up drain any liquid off, add taco spice and keep on cooking. Cook for about 12-20 hours total- depending on size- -- it should be falling to pieces! Shred with fork. Use in tacos instead of ground beef or chicken. Refrigerate leftovers to use for sammies the next day with sauce and onions!

We use this pork for tacos the first night and then use the leftovers for sandwiches the second! As long as you think ahead it is SO easy!
