2 c sifted flour
1 t baking pwdr
1/4 t soda
1 1/4 c sugar
3/4 c soft shortening
1 t salt
2 t lemon extract
1/4 t yellow food coloring
1 egg
1/4 c evap milk
1/4 c granulated sugar (for rolling)

Sift flour, baking pwdr and baking soda on waxed paper. Beat sugar, shortening and salt in a 3 qt bowl until light and fluffy.

Add egg, lemon extract and food coloring. Beat well, scraping sides of bowl often. Gradually beat in evaporated milk.

Add flour mixture and beat at slow speed, scraping sides of bowl often. Chill dough 30-60 minutes. Shape dough with wet hands into 1 in. balls. Roll in granulated sugar.

Place on ungreased cookie sheet about 2 inches apart. Bake near center of 350 º oven 12-13 min. or until light brown.
