2 apples, fresh tart locals or granny smith
1 stalk celery, thinly sliced
juice of 1 lemon
1/2 bag spinach, cleaned and trimmed
1/2 cup black walnut pieces (or english walnuts)
4 scallions, thinly sliced
1/2 cup blue cheese dressing (see recipe below)

Blue Cheese Dressing:
6 tbsp. blue cheese
1/2 cup olive oil
1 clove garlic, minced
1/4 tsp. white pepper
1/4 tsp. paprika
1/2 tsp. salt
3 tbsp. vinegar

Directions:
Directions:
Rinse the apples and slice in thin wedges, leaving the peel intact. Toss with the celery and lemon and set aside. Preheat the oven to 400º. Place the nuts on a baking sheet and roast for about 5 minutes. Careful, they burn easily. Divide the spinach between 4 salad plates and casually arrange the apples on top. Sprinkle nuts and scallions over top and drizzle with blue cheese dressing.

Blue Cheese Dressing: Crumble the cheese and mix into the oil. Mix the garlic and seasonings into the vinegar. Pour the oil into the vinegar, stirring well.
