3 pounds potatoes, red or yellow thin-skinned variety
1/2 yellow onion, diced
1/2 green bell pepper, diced
1/2 red bell pepper, diced
4 ribs celery, diced
4 scallions, cut thin
1 bunch parsley, minced
1 cup homemade mayonnaise (or Hellman's)
1/2 cup mustard
1 tsp. salt
1/2 tsp. white pepper
1/2 tsp. black pepper
1/4 tsp. cayenne pepper
1/4 cup paprika

Directions:
Directions:
Scrub the potatoes, and cut into large pieces. Just cover with well salted water and bring to a boil. Boil about 10-15 minutes until cooked through, but slightly firm to the fork. Drain, but do not rinse. Let cool. Combine the potatoes with the other ingredients in a large bowl. Stir to mix and adjust the seasoning.

The more you stir, the more your potatoes will mash. That is why I like to keep the potato pieces large. They are just about salad size by the time you're finished mixing.

YUMMY - it's good cold, it's good hot and it's especially good the next day!
