Pecan Pie Recipe

2 egg yolks
1 c sugar
4 T sifted flour
1 c sour cream
1/4 t lemon extract
1/2 t salt

Topping:
2 egg whites
1 c. slightly chopped pecans
1 c brown sugar

Directions:
Directions:
Mix egg yolks and sugar. Add flour, sour cream, lemon extract and salt. Cook in double boiler until thick - about 45 minutes. Spoon into pre-baked 9" pie shell and cover with topping.

Topping:
Beat egg whites until they form a soft peak. Add brown sugar and stir in pecan. Spread over filling. Bake at 350º until brown, about 15 mintues.
