1/2 cup boiling water
1 1/2 cup all bran cereal, divide (1 cup and 1/2 cup)
1/2 cup of butter, room temperature
3/4 cup of Swerve, or 1/2 cup agave nectar
1 egg
1 cup of buttermilk
1 1/4 cups whole wheat pastry flour
1/1/4 tsp baking soda
1/4 tsp salt
1/2 cup of raisins or other dried fruit

1. Preheat oven to 350 degrees. 2. Pour boiling water over 1/2 cup of bran; set aside to cool.
3. Beat together butter and Swerve until creamy. 4. Add egg and buttermilk blending well. 5. Stir soaked bran mixture into creamed mixture. 6. Stir together flour, soda, and salt, and then blend into creamed mixture. 7. Add remaining bran cereal. 8. Stir in raisins. 8. Pour into muffin cups sprayed with vegetable spray. 9. Bake in 350 degree oven for 18-20 minutes until brown.©
