Pumpkin Soup Recipe

2 T butter
1 8 oz pkg sliced mushrooms
1/2 c chopped onions
2 T flour
1/2 t curry
1 can pumpkin (15 oz)
1 can chicken broth
1 T honey
1/2 t salt
1/4 t nutmeg
1/4 t pepper
1 c half and half

Directions:
Directions:
Sautee mushrooms and onions in butter until tender. Stir in flour, curry, 1 can chicken broth. Cook 3-5 minutes. Transfer in batches to blender. Puree until smooth.

Pour into crockpot, add pumpkin, 1 can chicken broth and spices. Heat 30 minutes-1 hr, until hot.

Slowly add half and half before serving.

Top with finely chopped chives if desired.

Soup can be frozen before up to 1 month. Still add cream at last minute.
