1 1/2 lb. large shrimp
1/2 C flour
Salt, pepper, & cayenne to taste
1/2 C olive oil
4 cloves garlic, minced
2 shallots, chopped
1/2 C. parsley
1/2 t. oregano

Directions:
Directions:
Combine flour, salt, pepper and cayenne. Dredge shrimp in seasoned flour. Saute shrimp in olive oil for 5 minutes over high heat, shaking briskly. Remove shrimp to a shallow casserole dish. Add garlic, shallots, parsley, and oregano to the oilive oil in the saute pan and saute over medium heat for 3 minutes, shaking the pan briskly. Add herbs/oil to the shrimp in the casserole. Broil for 2 minutes. Serve over seasoned rice if desired.

Papa used to make Shrimp Scampi when Nana was very sick. It was his "speciality".
