Nonstick spray
1 tbsp. Dijon mustard
1/4 tsp. dried tarragon leaves
1/8 tsp. garlic powder
8 oz. pork tenderloin (1 1/2 inch diameter)
1 to 2 tbsp. seasoned dry bread crumbs

Directions:
Directions:
Heat oven to 425. Line 15x10x1 inch baking pan with foil; spray with nonstick cooking spray.

In small bowl, combine mustard, tarragon and garlic powder; mix well. Brush tenderloin with mustard mixture.

Spread bread crumbs on plate or sheet of waxed paper. Carefully roll tenderloin in bread crumbs to coat top and sides. Placed coated tenderloin on sprayed foil-lined pan. Spray surface of tenderloin with cooking spray.

Bake at 425 for 25-30 minutes or until no longer pink. T serve, cut into slices
