6 to 8 Jumbo Shrimp
8 slices of thick sliced bacon
1 Large fresh Jalapeno, thinly sliced into slivers
8 slices of thinly sliced Monteray Jack cheese

Directions:
Directions:
Fry bacon for only 2 to 3 minutes, the bacon should still be limp and raw. Remove from skillet, blot with paper towels.

Butterfly shrimp, leave tails on. Rinse. Place sliver of cheese and jalapeno in opening of shrimp. Take bacon and wrap around shrimp and secure with toothpick.

Grill shrimp over medium high heat over coals or you can broil in oven until bacon is crisp.
