Spinach Pie Recipe

Crust: 1 1/4 C Flour
2 to 4 T powdered sugar
1 stick butter

Filling: 1 pkg.frozen chopped spinach - drained
1 small onion - chopped
salt, pepper & nutmeg
1 cup whipping cream
3 eggs
6 to 8 oz. grated swiss cheese

Directions:
Directions:
--For Crust: cut flour, sugar & butter together and pat into 9" pie plate.
Bake 425 for 7 to 10 minutes until light brown.

--For Filling:
Saute onion in 3 Tbls. butter.
Beat eggs & cream together.
Add remaining ingredients.
Pour into pie crust - Bake 375 until lightly set.
Remove from oven and cover top with 6 to 8 oz. grated swiss cheese.
Continue baking process until total time is 45 minutes or until completely set and golden brown.
