1 1/2 c. Warm Water
2 tbsp. Butter, Softened
1/2 c. Honey
2 c. Bread flour
2 c. Wheat flour
1 tbsp. Cocoa
1 tbsp. Sugar
2 tsp. Instant Coffee
1 tsp Salt
2 1/4 tsp. Yeast
1 tsp. Carmel Color (optional)
3 tbsp. Cornmeal (for dusting)

1. The first thing you need to do is to combine the flours, cocoa, sugar, coffee and salt in large bowl.

2. Now, make a hole or well in the center, pour the warm water into the hole that you made, now add the butter, honey and yeast.

3. Using a spoon mix the ingredients together slowly pull the dry ingredients into the hole or well. After, the dough is soft and can be handled you will need to knead the dough for around 10 minutes until it is smooth and the color is even.

4. Now place the dough in a covered bowl in a warm place for an hour. This will give the dough time to rise. When it has risen to double its size, punch it down and divide it into 8 even tubular shaped loaves. Sprinkle them with the cornmeal and place them on a cookie sheet. Now, you will need to cover the cookie sheet with plastic wrap and allow the dough to rise again for another hour.

5. Preheat your oven to 350º F. Now, uncover the dough and bake in the oven for 20 to 24 minutes.
