2 med or large potatoes
3 T butter
3 T flour
1 1/2 c milk
1 t salt
dash pepper
minced onion (optional)
1 c grated cheddar cheese
3/4 c. green pepper

Directions:
Directions:
Peel and cut potatoes into thin slices.

Melt butter and stir in flour until blended. Cook and stir milk in slowly.

Season with salt and pepper. Cook sauce until smooth and barely boiling. Add minced onion if desired. Fold in cheese and green pepper.

Lightly grease 13x9" baking dish. Layer with potatoes, cream mixture, potatoes, cream mixture. Sprinkle lightly with parsley flakes.

Cook at 350º for 2 hours.
