20 extra large cucumbers = 2 gallons 2 cups pickling lime 4 cups of clear vinegar 1 oz. red food coloring, t tablespoon alum 8 cinnamon sticks 12 cups sugar 38 ounces of red hot candy

Directions:
Use extra large cucumbers. Peel and cut in 1" rings, core out all seeds. Measure out 2 gallongs of rings and soak overnite in 2 cups pickling lime dissolved in 2 1/2 gallons of water. After soaking overnite, wash good and soak about 15 minutes in clear water. Drain cucumbers, and put rings in large container and mix 1 c of clear vinegar, 1 oz. red good coloring, 1 tbsp alum and enough water to cover rings and simmer rings in this misture for 3 hours DO NOT BOIL. Put rings in crock or container other than aluminum or galvanized and mix 3 cups vinegar, 3 cups water, 8 cinnamon sticks, 12 cups sugar, 38 ounces red hots. Bring syrup to a boil and when sugar is dissolved pour over rings, cover and let stand until next day. Next day drain liquid and bring to a boil and pour over rings for secon time. Next day do this procedure for a third time and the fourth day pack up in jars and pour boiling syrup over them and seal, when opened keep cold to retain crispness
