1 qt milk, heated
1/4 c tapioca
2 eggs
1/2 c sugar

Directions:

Add tapioca to heated milk, stir until clear.

Separate 2 eggs, put whites in large bowl, whip until stiff.

Put 2 yolks in small bowl, beat with fork and add sugar.

Add a little of hot mixture to egg yolks, then stir into hot mixture, cook until slightly thickened. Mixture will thicken more as it cools.

Slowly add hot mixture to beaten egg whites.

Tapioca pudding is great, especially good around holidays and with cookies. Tapioca are tiny round balls and may not be easy to find. Grandma used to bring them to me in a paper bag from Ohio. I bet Whole Foods or Central Market would have them or know where to get them.
