1/4 c butter
1/2 c minced onions
1/2 c carrots, diced and small
1/2 c celery, diced and small
1/4 c flour
1 qt chicken stock
1 qt milk
1 c processed cheddar cheese, shredded
paprika
salt
pepper
parsley

Directions:
Directions:
Sautee:
Carrots, onions, celery in butter.

Add:
Flour, stir until smooth. Slowly add 1 quart chicken stock - cook until thick and bubbly over low heat.

Add: 1 quart milk - stir until warm. Add 1 c processed cheddar cheese.

Season: salt, pepper and paprika to taste

Top: with 2 T shredded parsley if desired. Best done in double boiler to avoid milk burning on bottom of pan. Need to stir often to be sure that doesn't happen.
