1/2 cup sugar
1 can sweetened condensed milk
1 can large evaporated milk
6 oz. cream cheese
6 oz. water (for different flavor you may substitute
Kahlua-Amaretto or Brandy)
5 large eggs
2 tsp Mexican vanilla

Directions:
Melt 1/2 cup sugar in a heavy sauce pan over medium heat. WATCH it burns very quickly. Pour into 6 ramekins or a 6 cup glass cake pan swirling to coat sides. You can also make it in a double boiler on top of the stove. Use the top part of the double boiler to melt the sugar swirling it up the sides of the pan. Set aside to cool. Make the custard by placing all the next ingredients into a blender. Blend until well mixed. Pour into ramekins or top of double boiler. If you use the ramekins or cake pan set them in a water bath (hot water) in a 350ºF oven and cook until a toothpick inserted in center comes out clean; takes anywhere from an hour to an hour and a half. If you are using the double boiler method set the top part of the double boiler on top of boiling water in the bottom pan and cover with a lid; turn to simmer and check to see that it does not boil dry. Add only boiling water,so as not to slow down the cooking time which is about an hour. When cooked let ramekins cool in water bath set out on counter same with the double boiler then place in the refrigerator and cool completely. Unmold onto serving plate or plates; the caramelized sugar will make a lovely sauce around the custard.
