Directions: |
Directions:Place all ingredients except the eggs, blueberries and the maple syrup in a big bowl and stir well and let sit for a half hour. Then add the beaten eggs. Pour batter onto a heated skillet in small round pancakes. The pancakes are dense and have a different texture than regular pancakes so they are much more filling and do not need to be as large. When cooked on one side, flip and cook on the other side. Top two small pancakes with a half cup of fresh blueberries and a drizzle of maple syrup |

Notes: I was watching the food network where Rachael Ray visits different restaurants and she had gone to one in Maine where they made five grain pancakes and she loved them. I was not able to copy the recipe but I remembered it had the millet and flaxseed and I created the rest of the recipe and MAN are these pancakes YUMMY. One serving is about 250 calories but they have a ton of vitamins and fiber!
