Spinach Calzone Recipe

2/3 cup skim ricotta cheese
1 cup frozen chopped spinach. thawed and drained
2/3 cup shredded mozzarella cheese
1 tbsp. grated Parmesan cheese
1/2 tsp. dried basil or 1 tsp. fresh basil
1/4 tsp. dried oregano
1/8 tsp. pepper
1 (1 lb.) frozen dough, thawed
5 tsp. flour
1 egg white

Quick Tomato Sauce:
2 lbs. ripe plum tomatoes
1 qt. boiling water
1 qt. ice water
Pepper to taste
1 small onion, chopped
1 garlic clove, minced
1 tbsp. olive oil
1 bay leaf
1 1/2 tsp. dried basil

Directions:
Preheat oven to 375. Spray a baking sheet wit;h cooking spray. Set aside.

In large bowl combine ricotta, spinach, mozzarella. Parmesan cheese, basil, oregano, and pepper.

Divide dough into 5 equal sizes and roll into 5 - 6 inch circle, using 1 tsp. flour for each piece.

Place 1/5 of the spinach filling over 1/2 of each circle. Fold the dough over the filling and firmly pinch the edges together to seal. Brush the tops with egg white. Bake til golden and puffed 20 - 25 minutes. Serve with Quick Tomato Sauce.

Quick Tomato Sauce: Using tongs place tomatoes in boiling water for 20 seconds. Place in ice water. Peel, cut in 1/2 . Seed and chop. In medium pan, saute onion and garlic in oil about 7 minutes till soft. Add remaining ingredients. Cook 20 - 30 minutes, stirring occasionally. Discard bay leaf.

I usually do not make the sauce. I just buy Organic spaghetti sauce in a jar.
