1/2 c. shortening
1/2 c. packed brown sugar
1/2 c. sugar
1 egg, beaten
1/2 c. crushed pineapple, drain and reserve juice
1 tsp. vanilla
2 c. flour
1/4 tsp. salt
1/4 tsp. baking soda
1 tsp. baking powder
1/2 c. nuts (walnuts, almonds, or macadamia nuts)
1/2 c. shredded coconut, toasted

Pineapple Icing:
2 c. powdered sugar, sifted
2 T. butter, softened
1/2 tsp. vanilla
3 T. reserved pineapple juice

Directions:
Directions:
Cream shortening and sugars. Add egg, drained pineapple, and vanilla. Sift dry ingredients and combine with creamed mixture. Stir in chopped nuts. Drop by heaping teaspoons on a greased cookie sheet and bake at 375 for 8 to 10 mins. Combine icing ingredients in a bowl and beat until fluffy. Ice cooled cookies and dip the tops in toasted coconut.
