2 lbs stewing beef
1 cup chopped carrots
1 cup chopped celery
8 potatoes cut into pieces

1 can stewed tomatoes
brown gravy

Directions:
Directions:
In large pot, heat a little olive oil. Cut up the stew beef into bite size pieces and brown in pot. Empty stew tomatoes into bowl, cut them very small, or you can use a chopper for this. Pour tomatoes over beef. Cover and Simmer for 40 minuets. Add carrots, celery and potatoes. Add 1 can brown gravy, fill can with water and add this to pot. (ingredients should be covered with liquid) Bring to boil, reduce heat and cover. Simmer for 11/2 hours. Check pot and stir every once and a while.

You can any any vegetables you would like. If you are adding can vegetables, you only need to drain them and cook for 5 minuets.
Have extra brown gravy on hand and add if your sauce starts to evaporate.
