1 lb bacon
2 cups White Cheddar Cheese Shredded
3/4 cup Mayonaise
1/4 cup chopped onion (optional)
salt and pepper
1 loaf of pumpernickel cocktail bread (usually near the deli)

Directions:
Directions:
Cook bacon thoroughly. Pat dry any excess fat
Allow bacon to cool to room temperature.

Chop bacon into small bits (about 1/4 inch or so).
Mix mayonaise, cheese, bacon and onions in a medium mixing bowl.

The spread keeps in the refrigerator for 1-2 days if needed.

Just before serving, spread the bacon and cheese mixture onto the bread. Place the bread with topping under the broiler for 5-8 minutes (until cheese is melted and toast is crispy).

Serve while hot!
