2 1/2 to 3 C powdered sugar
3 oz. cream cheese
1 tsp. mint flavoring or more to taste
food coloring granulated sugar in a bowl

Directions:
Directions:
Mix cream cheese and powdered sugar well by hand adding more sugar if needed until not sticky. Knead until forms a smooth ball.
Add flavoring and coloring. Taste for desired flavor.
Measure approximately 1/2 tsp. and form into ball.
Drop balls into granulated sugar. Roll until coated.
Press mixture into candy mold and flex mold to release mint. Drop onto waxed paper.
Let stand for an hour or two so that the surface is dry and mints can be moved to a container.
Cover tightly and refrigerate or freeze.
