5-6 ripe peaches, peeled and cut into eighths
1 cup fresh blueberries
1/4 cup plus 1 T. sugar
1/2 tsp. cinnamon
2 tsp. cornstarch
1 large egg
3 T. unsalted butter, divided, melted and cooled
1/4 cup heavy cream
1/2 cup plus 2 T. flour
pinch of salt
1 tsp. baking powder
vanilla ice cream (optional)

Preheat oven to 350 degrees. In a bowl whisk together 1/4 cup sugar, cinnamon, and cornstarch. Add peaches and blueberries and set aside. In a small bowl whisk together the egg, 2 T. melted butter and cream. Set aside. Sift together flour, salt, baking powder, and remaining 1 T. sugar. Make a well in center of the dry ingredients and pour the egg mixture into well. Using hands, draw the dry ingredients into the wet ingredients, and work dough together until just mixed. Divide fruit into four 8 oz. ramekins or oven-proof glass or ceramic dishes. Gently pat dough into four disks just big enough to fit on top of each ramekin. Place dough on top of each ramekin and brush with remaining 1 T. melted butter. Place ramekins on a baking sheet and bake until crust is golden brown, 17-25 minutes (time varies by oven, don’t take out until the tops are golden brown or crust will be doughy in the middle). Serve hot with a scoop of ice cream on top of each ramekin.
