2 pounds lean ground beef
2-3 tablespoons oil
2 medium onion, chopped
1 clove garlic,crushed
1- 14 ounce jar of spaghetti sauce
1- 16 ounce can stewed tomatoes
1-30z. can mushrooms, sliced and undrained
1-80z. shell macaroni, pinwheels, rotini, etc.
1 1/2 pints dairy sour cream
8 oz. provolone cheese
8 oz. mozzarella cheese, sliced

1. Cook ground beef in oil in a large, deep pan until brown. Stir often with a fork. Drain off excess fat. Add onion, garlic, spaghetti sauce, stewed tomatoes, and undrained mushrooms. Mix well. Simmer 20 minutes or until onions are soft.
2. Meanwhile, cook macaroni according to package directions. Drain and rinse with cold water.
3. Pour half of the shells into a lightly greased, deep casserole dish. Cover with half of the meat-tomato mixture and half of the sour cream. Top with slices of provolone cheese. repeat the layering process of macaroni, meat-tomato mixture,and sour cream, ending with a topping of Mozzarella cheese.
4. Cover and bake in a preheated 350 oven for 35 minutes. Remove cover and continue baking until Mozzarella cheese melts and browns slightly.

This can be made in a 5 quart crock pot. Cook on low for 5-6 hours.
