1 yellow onion
1 red onion
2 tsp salt
2 tsp pepper
1 tbsp thyme
2 tbsp balsamic vinegar
1 tbsp butter
1 tbsp olive oil
1 cup of goat cheese
1 cup of creme fraiche

Directions:
Directions:
Slice onions add to pan, include 1 tbsp butter, 1 tbsp olive oil, 1 tsp salt, 1 tsp pepper, brown the onions until carmalized - apporx 15/20 minutes, add balsamic vinegar to scrape up brown bits. Add creme fraiche and goat cheese to bowl, pour carmalized onions over chesse mixture, add thyme and remaining salt and pepper. Mix and then refrigerate 2 to 10 hours, serve with crackers.
