5 Roma Tomatoes, whole
1 Large Red Onion, quartered
3/4 cup olive oil
1 tablespoon brown sugar
10 basil leaves
1 tablespoon minced garlic
Salt and pepper to taste

Directions:
Directions:
1. Preheat oven to 400 degrees and bake tomato and onion in a covered casserole dish with 1/4 cup of olive oil, 1 tablespoon of brown sugar and salt and pepper to taste for 45 minutes. 2. Remove from oven and allow to cool. 3. Place in food processor and add basil leaves, garlic, olive oil, salt, and pepper. 4. Blend until thick, smooth, and creamy. 5. Serve over any type of green salad, pasta, or use as a dip.©
